Cookie Recipe

INGREDIENTS
1 cup unsalted butter
softened
1 cup brown sugar
1 large egg
1 teaspoon vanilla
½ teaspoon almond extract
2½ cups flour
1 teaspoon baking powder
½ teaspoon salt
Preheat the oven to 325
DIRECTIONS
1. Combine butter and brown sugar; beat until fluffy with an electric mixer.
2. Beat in egg, vanilla, and almond extract.
3. In a separate bowl, combine flour, baking powder & salt.
Add flour mixture ½ cup at a time to the cookie dough.
4. Blend these ingredients
until the flour is thoroughly mixed in. Don’t over mix!
5. Divide the dough into four balls and shape each into a rough rectangle.
6. Place the dough rectangle between two layers of saran wrap and roll to ¼” thickness.
7. Chill the rolled dough (you can stack the saran wrapped pieces) in the refrigerator for approximately 30 minutes, or until firm.
